Steaklet of duck with raspberry vinegar
Ingredients for 4 :
4 steaklets of duck, 120 gr of rapsberries, 40 cl of raspberry vinegar, 25 cl of melts of poultry, 300 gr of dauphine potatoes, 300 gr of French beans, 1 soup spoon of caster sugar, salt and pepper.
Preparation :
In a frying pan, make cook sugar with a little water to obtain a caramel.
Thaw with the vinegar, add raspberries and the melts of poultry.
Notch the steaklets side skin and cook them on the same side without fat content.
Salt and pepper.
Make cook the French beans with salted ebullient water during approximately 5 minutes ( they must remain cracking ).
Make fry the dauphine potatoes.
Coat the steaklets with raspberries sauce and serve with French beans and dauphine potatoes.
