Escalopes of fresh salmon with mustard


Ingredients for 4 people: 1 500g piece of fresh salmon cut into 4 escalopes, 4 teaspoons of Meaux® mustard, 15 cl of white wine, 1 shallot, 250 gr of butter, oil, salt and pepper.

 

Preparation :
 

Heat the white wine and the diced shallot gently in a pan.

Reduce to 1/3 of the quantity of liquid, then add the butter in small pieces whisking vigorously. 

 

Strain the mixture through a muslin sieve, add the mustard, adjust the seasoning and keep warm in a Bain Marie.

 

Cook the salmon escalopes in a non-adhesive pan, one minute on each side.

Then pour the sauce onto the serving plate, and place the salmon on top.
