Mayonnaise with sweet herbs

Ingredients : 2 egg yolks, 1 soup spoon of moutarde du Lion, 300 ml of olive oil, 2 wine vinegar coffee spoons, 1 chopped fresh parsley coffee spoon, 1 coffee spoon of fresh tarragon, 1 coffee spoon of fresh chive chopped, lemon-yellow, salt and pepper.


 

 

Preparation :

 

In a bowl, whip the egg yolks and mustard together.

 

With the whip, incorporate oil in a thin net.

Pour oil more quickly when the mixture thickens.

When it is very thick and before oil is not all built-in, add the vinegar and the juice of lemon while whipping.

Incorporate the remainder of oil or more, with the need.

 

Incorporate sweet herbs and season liberally.

Use immediately with various kinds of salads or cold meats.

 

Easy way : To preserve mayonnaise in refrigerator, incorporate 1 spoon in ebullient water coffee.

Cover with a food film so that it touches mayonnaise.

Use in the 24 H.
