Fritters with Meaux® mustard


Ingredients for 4 people: 800 gr of floury potatoes, 150 gr of sifted flour, 2 eggs, 15 cl of beer, 2 tablespoons of Meaux® mustard, 12 small onions, 1 table spoon of oil, 250 gr of soft cottage cheese, 1 teaspoon of mild paprika, salt, pepper, 1 pan of frying oil.

 

Preparation:  30 mins, mixture to rest for 30 mins, cooking time 25 mins.

 

Peel the potatoes and cut into thick chips. Wash them and boil for 8 minutes in salted water. Drain.

 

Mix the flour with the egg yolks, beer, mustard and a pinch of salt.  

Cover and leave to stand for 30 mins.

 

During this time, wash the onions and reserve the greens.

Brown them for 5 mins in a pan of hot oil, then set aside on a plate in a warm place. 

 

To make the sauce, season the cottage cheese with the salt, pepper and mild paprika. 

 

Beat the 2 egg whites to firm peaks and fold them gently into the mixture. 

Heat the frying oil to a temperature of 180°C.

 

Place the potatoes one by one into the mixture, then straight into the frying pan.

When the fritters are golden, drain them on kitchen paper.

 

Serve hot, with the browned onions and the sauce.
