Potato and salad with black pudding

Potato and salad with black pudding

Ingredients for 4 people: 800 gr of potatoes, 2 portions of black pudding, 1 red apple, 2 spring onions, 1/2 a lemon, 2 tablespoons of cider vinegar, 1 tablespoon of sherry vinegar, 5 soup tablespoons of oil, chives, salt and pepper.

 

Preparation:  20 mins, cooking time 10 mins

 



Finely chop the onions, slice the stalks into thin strips.

Halve the apple.

De-seed and cut into slices.

Sprinkle with lemon juice.

 

Whisk the vinegars with the salt, pepper and oil.

Add the onions.

Cook the black puddings in a pan, turning regularly until browned and crisp.

 

Peel the potatoes.

Cut into slices.

Boil and whilst still hot pour over the onion vinaigrette.

Divide onto two plates.

 

Add the potatoes and the hot black pudding cut into slices.

Sprinkle with the chives and the spring onion stalks. 

 

Tip: You can prevent the black pudding from bursting during cooking by wetting them from time to time with water
