Green Pepper Mustard Sabayon


Ingredients for four:

4 egg yolks, 1 tablespoon of Pommery ® Green Pepper Mustard, 1 liqueur glass of dry white wine, 1 small ladleful of stock

Preparation :

Put the egg yolks, the mustard and the white wine into a thick-bottomed saucepan and add salt and pepper.
Whisk the mixture over a low heat. It will double in volume and become creamy.

Slowly and regularly, pour the ladleful of stock (taken directly from the cooking recipient) and keep whisking until you obtain a light, smooth cream.

Pour over the meat or fish of your choice.
