Tabbouleh with fresh fruits


Ingredients for 8 : 150 g of semolina, 170 g of caster sugar, 180 g of fruit juice ( orange, lemon and pomelo ), 2 kiwis, 2 oranges, 200 g of pineapple, 50 g of frozen blackcurrant or another berry, 20 g of passion fruit vinegar.

Preparation : 15 min

Boil 40 g of sugar with the vinegar.
Add it the fruit juices, 30 g of sugar, then leave it on ice.
Mix the semolina with this juice and leave it to stand 6 hours minimum.
Peel and cut in little cubes the oranges, the kiwis and the pineapple, then blend it in the semolina.
Prepare a syrup with the rest of sugar ( as much water as sugar ), and put in the blackcurrant to macerate.
Blend the strained and cold blackcurrants in the semolina.
