Herb Mayonnaise



Preparation: 10 minutes


For 4 persons:


  • 2 egg yolks
  • 1 tablespoon of herbs Pommery® mustard
  • 300 ml of olive oil
  • 2 teaspoons of wine Pommery® vinegar
  • 1 teaspoon of chopped fresh parsley
  • 1 teaspoon of fresh tarragon
  • 1 teaspoon of fresh chopped chives
  • Lemon
  • Salt and pepper.

Herbs mayonnaise


Déroulement : 


  • In a bowl, whisk together egg yolks and herbs Pommery® mustard.
  • Whisk the oil into a thin drizzle.
  • Pour in the oil faster when the mixture thickens.
  • When it is very thick and before the oil is completely incorporated, whisk in the vinegar and lemon juice.
  • Stir in remaining oil or more, if necessary.
  • Stir in herbs and season generously.
  • Use immediately with different kinds of salads or cold meats.



To keep mayonnaise in the refrigerator, add 1 teaspoon of boiling water. Cover with clingfilm so that it touches mayonnaise. Use within 24 hours.
