Ingredients
Pommery® Barbecue Mustard
300 g ground beef, ideally around 15% fat
2 brioche burger buns or classic burger buns
1 small yellow or red onion
A few sprigs of fresh parsley
2 slices of cheddar, Comté or burger cheese
1 tomato, sliced
A few crisp lettuce leaves
2 tablespoons mayonnaise or homemade burger sauce
A drizzle of neutral oil for cooking
Salt and freshly ground black pepper
Optional: a few sliced pickles or pickled red onions
Recipe method
Prepare the patty mixture. Peel and finely chop the onion. Chop the fresh parsley. In a mixing bowl, combine the ground beef with the onion, parsley, 1 generous teaspoon of Pommery® Barbecue Mustard, a pinch of salt and a few twists of black pepper.
Shape the patties. Divide the mixture into two equal portions, then shape into two thick patties slightly wider than the burger buns. Make a small indentation in the centre of each patty with your thumb to help them keep their shape while cooking.
Cook the beef. Heat a frying pan or grill with a drizzle of oil. Add the patties and cook for 3 to 4 minutes on the first side without moving them too much, so they develop a nice browned crust.
Melt the cheese. Flip the patties and continue cooking for 2 to 3 minutes, depending on your preferred doneness. Add one slice of cheese on each patty, then cover the pan for 1 minute to help the cheese melt.
Toast the buns. While the beef is cooking, slice the burger buns in half and toast them quickly in a pan, in the oven or in a toaster. They should be lightly golden on the inside while staying soft.
Assemble the burger. Spread a little mayonnaise or burger sauce on the bottom bun, then add the lettuce, the cheesy beef patty, tomato slices and pickles if using. For an extra gourmet touch, spread a thin layer of Pommery® Barbecue Mustard on the top bun before closing the burger.
Serve immediately. Enjoy while the cheese is still melted and the beef is juicy. Serve with homemade fries, roasted potatoes or a crisp side salad.
