Ingredients

  • Pommery® Lemon & Basil Mustard

  • 2 salmon fillets, skin-on or skinless

  • 1 unwaxed lemon

  • 1 tablespoon olive oil

  • 1 small teaspoon honey or maple syrup

  • A few fresh basil leaves

  • A few sprigs of parsley or dill, according to taste

  • 1 small garlic clove, grated or finely chopped

  • Salt and freshly ground black pepper

  • Optional: a few vegetables to roast alongside the salmon, such as courgettes, cherry tomatoes or green asparagus

Recipe method

  1. Prepare the salmon. Preheat the oven to 180°C. Place the salmon fillets in a lightly oiled baking dish or on a tray lined with baking paper. Gently pat them dry with kitchen paper so the marinade coats the surface more evenly.

  2. Make the lemon–basil marinade. In a bowl, mix 1 generous tablespoon of Pommery® Lemon & Basil Mustard with the olive oil, honey, the zest of half a lemon, a squeeze of lemon juice, garlic, a pinch of salt and a few twists of black pepper.

  3. Coat the fish. Generously brush the salmon fillets with the mustard mixture. Make sure the top of each fillet is well covered to create a thin aromatic layer that will flavour the fish as it cooks.

  4. Roast in the oven. Bake at 180°C for 12 to 15 minutes, depending on the thickness of the fillets. The salmon should remain tender in the centre and flake easily with a fork. Avoid overcooking it to keep the texture moist and delicate.

  5. Add freshness. Once out of the oven, add a few drops of lemon juice, freshly chopped basil and, if desired, a little parsley or dill. Let the salmon rest for 1 minute before serving so the flavours can settle.

  6. Serve. Serve the salmon with basmati rice, steamed potatoes, a crisp salad or roasted vegetables. Add a thin lemon slice on top of each fillet for a simple and elegant presentation.
