Ingredients
- Lentil flour: 100 g
- Water: 300 g
- Walnut oil: 2 cl
- Voatsi pepper mustard: 60 g
- Whole egg: 2 pcs (100g)
- Fine salt
- Pepper from the mill
- Old-fashioned mustard with Cognac: 80 g
Recipe process
- In a mixing bowl, place the lentil flour, a little salt and ground pepper, 60 g of Voatsi pepper mustard, the eggs and the walnut oil.
- Mix with a whisk and dilute with water. Heat a non-stick frying pan and pour a small ladle of the mixture.
- This batter should bubble in the pan. If it doesn't, heat the pan a little more.
- Carefully turn the pancake over and brown the other side.
- Place on a small plate, roll up and enjoy topped with old-fashioned Cognac mustard.
- You can also make large crepes and cut them with a cookie cutter.
