Galettes de lentilles à la moutarde au poivre et moutarde ancienne au cognac

Ingredients

  • Lentil flour: 100 g
  • Water: 300 g
  • Walnut oil: 2 cl
  • Voatsi pepper mustard: 60 g
  • Whole egg: 2 pcs (100g)
  • Fine salt
  • Pepper from the mill
  • Old-fashioned mustard with Cognac: 80 g

Recipe process

  • In a mixing bowl, place the lentil flour, a little salt and ground pepper, 60 g of Voatsi pepper mustard, the eggs and the walnut oil.
  • Mix with a whisk and dilute with water. Heat a non-stick frying pan and pour a small ladle of the mixture.
  • This batter should bubble in the pan. If it doesn't, heat the pan a little more.
  • Carefully turn the pancake over and brown the other side.
  • Place on a small plate, roll up and enjoy topped with old-fashioned Cognac mustard.
  • You can also make large crepes and cut them with a cookie cutter.
